This wine, produced in small quantities, comes from a 22-ares plot, planted with old Aligoté vines, but with any missing vines replaced by Chardonnay. It therefore subtly combines the freshness of the Aligoté grape with the smoothness and richness of the Chardonnay.
When he took over the domaine, Benoît Eschard fell in love with this atypical wine, without an AOC classfiication, and he decided to age it in oak barrels. He then renamed it “l’Envol” (the flight), as a nod to his change of lifestyle and vocational retraining.

Soil: deep brown colluvial deposits, limestone, silty-clay, with hardly any gravel.

Best drinking time: From 1 to 4 years after harvest

Vinification:
Grapes picked and sorted entirely by hand
Slow pressing and cold settling for 36 to 48 hours
Alcoholic fermentation carried out in oak barrels
Ageing:
100% oak barrels aged between 4 to 5 years, for 10 months
The lees are stirred up during the first few months of ageing
